REDWINE-SHALLOT SAUCE 
2 c. red wine
4 chopped shallots
1 bay leaf
Pinch of cracked peppercorn
3 c. demi glace
Salt and pepper to taste

Reduce the red wine, shallots, bay leaf and peppercorns by 3/4. Add the demi glace and bring to a boil. Adjust seasoning.
