CHICKEN DIVAN | |
2 (10 oz.) pkgs. frozen broccoli 2 c. cooked, diced chicken 2 (10 oz.) cans cream of chicken soup, undiluted 1 c. mayonnaise 1 tsp. lemon juice 1/2 tsp. curry powder 1/3 c. slivered and toasted almonds 1/2 c. sliced mushrooms, slightly sauteed 1/2 c. grated sharp cheese or Parmesan cheese 1/2 c. bread crumbs 1 tbsp. melted butter 1/4 c. sherry (if desired) Cook broccoli according to directions; drain. Arrange in lightly greased 2 quart casserole or baking dish. Then top with cooked chicken, mushrooms and almonds. Combine soup, mayonnaise, lemon juice and curry powder. Mix well and pour over chicken. Sprinkle with cheese. Combine bread crumbs and butter; sprinkle over all. Bake at 350 degrees for 25- 30 minutes or until thoroughly heated. Can be decorated with pimento strips. Note: In place of chicken, use turkey or ham. |
