SWEET POTATO PIE 
Sweet potatoes, about 3 lb
1 block butter
4 eggs
1 1/2 c. sugar
1 tsp. vanilla flavoring
1/2 tsp. cinnamon
2 uncooked pie shells

Peel and cut potatoes up in chunks. Boil until almost done. Drain and mash. Add butter, eggs, sugar, vanilla and cinnamon. If not soupy add another egg. Put in raw pie shells. Bake at 350 degrees for about an hour or until browned.
