GREEN APPLE TORTE 
8 med. size tart green apples, peeled, cored & sliced
2 tbsp. butter
3/4 c. sugar
Vanilla wafer crust (recipe follows)
7 eggs
2 c. sour cream
1/4 tsp. nutmeg
1 tsp. vanilla

In a large frying pan, stir apples sliced in melted butter; lightly blend in sugar. Cook, stirring occasionally over medium heat until apples begin to soften, 6 to 8 minutes. Remove apple mixture from heat. Remove and reserve 1/2 cup of the crust mixture. Press remainder evenly over bottom and 2" up the sides of a well buttered 9" springform pan with a removable bottom.

Beat eggs with sour cream and nutmeg until well combined; lightly blend in vanilla and apple mixture. Pour into crust lined pan. Bake in a 350 degree oven for 30 minutes; sprinkle with remaining crust mixture. Continue baking 15 to 20 minutes longer, until filling is set. Chill until ready to serve, several hours or overnight. Remove pan side before serving on pan bottom. Makes 10 to 12 servings.
