CUSTARD SQUARES 
1 c. sifted all purpose flour
1/8 tsp. salt
1 tsp. double acting baking powder
3/4 stick butter
1/2 tsp. vanilla extract
1 tsp. lemon extract
16 sugar substitutes
1/3 c. milk
Finely grated rind of 1 lg. lemon
2 eggs

Preheat oven to 375 degrees. Bake 25 minutes. Sift the flour, salt, and baking powder. Set aside. In a small bowl of an electric mixer. Beat the butter until soft, beat in vanilla and lemon extract; add sugar substitutes. On low speed add 1/3 of the dry ingredients and then add all the milk. (The mixture will curdle after adding the milk) on low speed add remaining dry ingredients beat until smooth. Remove the bowl from the mixer and stir in the lemon rind; add eggs and mix well. Custard square is thin after baking and moist.
