PUERTO RICAN CORN RICE | |
1 bell pepper, chopped 1 onion, chopped 1 stick butter 1 can beef consomme 1 can French onion soup 1 med. can "Niblet" corn (whole kernel) 2 c. uncooked rice Saute bell pepper and onion in stick of butter. Add soup and corn. DO NOT DRAIN. Heat thoroughly. Add rice. Cover and reduce heat. Stir occasionally (gently). Cooks in about 30 minutes. Serves many! |
