1 stick butter, softened 1/2 c. packed brown sugar 1/2 c. sugar Cream above well, then add (DO NOT USE MIXER) : 1 egg 1 tsp. vanilla 2 c. all-purpose flour 1/2 tsp. baking soda Pinch of salt Mix well and chill. FILLING: 1 (8 oz.) pkg. dates 1/4 c. sugar 1/2 c. water Pinch of salt 1/2 c. chopped pecans Boil first 4 ingredients for 5 minutes or until dates are mushy, stirring often. Add pecans. Roll dough in thin 18 x 12 inch sheet. Do this between wax paper or plastic wrap. Spread with filling. Roll up as a jelly roll. Chill or freeze. Slice very thin. Bake on ungreased cookie sheet at 350 degrees for 7 to 10 minutes. Yield: 7 dozen. |
