SPANISH RICE 
2 1/2 c. boiled rice
4 tbsp. bacon, chopped
2 tbsp. chopped onions
1/2 c. chopped celery
1/2 tsp. salt
2 c. tomatoes

Fry and chop the bacon; add rice, onion and celery and cook slowly until browned. Stir often. Add the rest of the ingredients and bake until vegetables are done.
