EDNA ROPER'S SQUASH CROQUETTES | |
4 c. cooked squash, drained 4 oz. onion, chopped fine 2 oz. melted butter 2 eggs 1 c. bread crumbs 2 tsp. salt (or to taste) 2 tsp. sugar 1 tsp. pepper 2 c. cornbread crumbs Mix all ingredients together. Form into croquettes. Roll in fine crumbs. Fry in deep fat. This mixture will keep in the refrigerator for several days. |
