ZUCCHINI RELISH 
10 c. chopped zucchini
4 c. chopped onion
5 tsp. salt
2 1/2 c. vinegar
1 lg. red sweet pepper, chopped
1 lg. green sweet pepper, chopped
6 c. sugar
1 tsp. tumeric
11 tsp. dry mustard
1/2 tsp. black pepper
1 tsp. corn starch
2 tsp. celery seed
2 tsp. mustard seed

Cover zucchini, onions and salt with water and let stand overnight. Drain well. Add all other ingredients and bring to a boil. Simmer for 30 minutes. Can in clean hot jars and seal.
