CHINESE PEPPER STEAK 
2 lb. beef tenderloin
1/4 c. salad oil
salt, pepper, MSG
2 bunches green onions minced
1 large clove of garlic- minced
3 large green peppers
2 c. beef stock
1/4 c. soy sauce
2 tbsp. cornstarch
2-3 tomatoes peeled

Cut meat with the grain in 1 inch wide strips. Brown quickly in hot oil. Season and push aside.

Sauté onions and garlic. Add peppers, cut in wide strips and sauté a few minutes. Add steak and simmer covered for 10 minutes. Mix cornstarch and soy sauce. Add and stir until thickened. Cut tomatoes in wedges and sprinkle with salt. Add to mixture. Cover, lower heat and simmer a few minutes longer until tomatoes are heated. They should not cook and the peppers should be only partially cooked.

Serves 8.
