1 (20 oz.) pkg. California vegetables (I add 1 pkg. broccoli) 1/2 lb. Velveeta cheese 1 stick melted butter 1 tube crushed Ritz or Townhouse crackers Cook vegetables per package instructions. Drain and add cheese (cheese should be cut into cubes to melt easier). Stir cheese and vegetables gently. Put this mixture into 2 quart casserole. Mix melted butter with crushed crackers and sprinkle over vegetables. Bake in conventional oven at 350 degrees for 15 to 20 minutes or microwave on high for 3 minutes. NOTE: Depending on size of casserole and on how many packages of vegetables I use. I increase crackers and butter and sometimes the cheese. Oblong Casserole: 1 1/2 tubes crackers and 1 1/2 sticks butter. |
