SKILLET CREOLE PEAS 
1 (10 oz.) pkg. frozen black-eye peas or 3 cans (1 with jalapenos)
3/4 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped green pepper
1 clove garlic, minced
1 (14 oz.) can whole tomatoes, drained
1/4 tsp. dried whole thyme
1/4 tsp. red pepper
1/8 tsp. hot sauce
Dash of ground allspice
1 bay leaf

Spray skillet with vegetable spray. Combine ingredients; cook over medium heat for 10 minutes. May be served hot, or chill well for a summer salad!
