VEGETABLE CHEESE BAKE 
2 (10 oz.) pkg. frozen mixed vegetables
1/2 c. boiling water
1/4 c. butter
1/4 c. flour
1 1/2 c. scalded milk
1/4 c. grated cheese
3/4 tsp. salt
Pepper
1/2 c. chopped green onions
1/4 c. sliced pimentos

Cook vegetable in 1/2 cup boiling water. Melt butter, blend in flour. Gradually add milk, stir until thick. Add grated cheese and seasoning.

Mix in vegetables, onions and pimentos. Put in greased 1 quart casserole. Bake at 350 degrees for 30 minutes until bubbly.
