1 c. pickling lime 2 gallons water 6 1/2 lb. sliced cucumbers, very small ones 3 pt. vinegar 1 tsp. allspice 4 1/2 lb. sugar 7 sticks cinnamon 1 tsp. celery salt 1 tbsp. salt Soak cucumbers in lime water for 24 hours. Wash and soak in clean water for 3 hours. Mix rest of ingredients; bring syrup to boiling point. Drain water off cucumbers and pour hot syrup over them. Let stand for 24 hours. Boil cucumbers and syrup for 21 minutes. Put in jars hot! Screw lids on tight. They'll seal themselves. |
