FIESTA CHICKEN 
4 chicken breasts, skinned and boned
8 oz. low-fat Jalapeno pepper cheese, cut into strips
1/3 c. butter (light)
1 c. crushed cheddar cheese crackers (mixed with taco seasoning)
1 1/2 tbsp. taco seasoning

Place chicken between plastic wrap and pound with mallet to flatten. Place a strip of cheese on each piece, roll up each piece of chicken, tucking in ends to completely enclose chicken, fasten roll with toothpicks. Dip each roll in melted butter and then in cheese cracker and taco seasoning mixture. Put rolls in a 12 x 7 inch baking dish. Cover with wax paper. Microwave for 10 to 12 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
