4 whole chicken breasts, halved, skinned & boned
8 oz. jalapeno pepper cheese, cut in strips
1/4 c. butter, melted
1 c. crushed Cheddar cheese crackers
1 1/2 tbsp. taco seasoning mix
Shredded lettuce
Tomato wedges
Ripe olives
Sliced avocado
Taco chips

Place chicken pieces between plastic wrap and pound with mallet to flatten. Place a strip of cheese on each chicken piece. Roll up each piece of chicken, tucking in ends to completely enclose cheese filling. Fasten rolls with toothpicks.

Dip each roll in melted butter, then coat with mixture of cheese crackers and taco seasoning mix. Arrange rolls in a 12 x 7 inch baking dish. Cover with wax paper. Microwave on high for 10-12 minutes. Serve on a bed of shredded lettuce and garnish with tomato wedges, olives, avocado and taco chips. Serves 6-8.
