SPAGHETTI WITH SHREDDED ZUCCHINI | |
1 (8 oz.) pkg. spaghetti 2 tbsp. butter 2 med. zucchini (about 1 lb.), shredded 1 (8 oz.) pkg. Mozzarella cheese, shredded 1/2 c. half & half or milk 1/2 tsp. salt 1/8 tsp. basil About 30 minutes before serving, prepare spaghetti in saucepan according to package directions. In a 10-inch skillet over medium heat, melt butter; cook zucchini until tender, about 5 minutes. When spaghetti is done, drain. Return spaghetti to saucepan; add zucchini and remaining ingredients. Over low heat, toss spaghetti mixture until cheese is melted. Serve immediately. Serves 4. |
