CREAM PUFFS 
1 c. boiling water
1/2 c. butter (no substitute)
1 c. flour, sifted
1/4 tsp. salt
4 eggs

Melt butter in boiling water then add all at once the flour and salt. Mix thoroughly and cook over direct heat until mixture leaves sides of pan. Do not over cook. Cool 2 minutes. Add eggs, 1 at a time, beating in each egg thoroughly. Dough should be shiny and loose from pan. Drop by large spoonfuls on greased baking sheet. Bake for 10 minutes in very hot oven, 450 degrees. Reduce heat to 350 degrees and bake 30 to 35 minutes. Cool; slit side and fill with custard, whipped cream or ice cream and top with frosting, confectioners' sugar or chocolate sauce.
