CAULIFLOWER CASSEROLE 
1 lg. head cauliflower
4 tbsp. butter
3 tbsp. flour
1 c. milk
1/2 tsp. salt
1/2 c. cheese

Remove leaves from cauliflower. Soak 10 minutes in water to which 2 tablespoons vinegar has been added. Wash well. Steam until tender. Sprinkle with salt, place in baking dish. Cover with sauce made as follows: melt butter and add flour. Blend and add milk and cook until creamy sauce forms. Stir constantly. Add remaining ingredients and mix well. Pour on cauliflower. Bake 10 minutes.
