TOMATO PIE 
5 red very ripe tomatoes
3 scallions, diced
Frozen pie crust
1/2 tsp. basil
1/2 tsp. chives
Salt & pepper
Cheddar cheese, shredded
Mayonnaise

Brown pie crust. Meanwhile, peel and slice tomatoes. Pat each tomato slice with paper towel to absorb all liquid. Layer sliced tomatoes into pie crust. Add chopped scallions, salt, pepper, basil and chives to top of tomato layer. In separate bowl, combine mayonnaise with shredded Cheddar cheese to a thick consistency. Spread cheese mixture on pie until entirely covered. Bake at 350 degrees for 20 minutes or until bubbly. Then broil until golden on top.
