1/2 c. butter 1 c. sugar 1 tsp. coconut extract 1 egg 1 pkg. Bix mix 1 pkg. spud flakes 1 tbsp. flour (plain or self-rising) Cream butter, sugar and coconut extract. Add egg and beat. Stir in Bix mix, spud flakes and flour (dough will be stiff). Cover bowl and chill for 1 hour. Heat oven to 375 degrees. Shape dough into balls and place on ungreased baking sheet. Bake 13 minutes. Makes 4 dozen. |
