ROMA MEATLOAF 
1 1/2 lbs. lean ground beef
1 egg
3/4 c. cracker crumbs
1/2 c. onion, finely chopped
1 (8 oz.) can tomato sauce with cheese
1 tsp. salt
1/2 tsp. oregano
1/8 tsp. pepper
2 c. Mozzarella cheese

Combine beef, egg, crackers, onions, 1/3 of the tomato sauce, salt, pepper and oregano. Mix well and shape into flat rectangle 10 x 12 inches on waxed paper. Sprinkle cheese evenly over mixture. Roll up like a jelly roll and press ends to seal. Bake at 350 degrees for one hour in shallow baking dish. Drain fat, pour on remaining tomato sauce. Bake 15 more minutes.
