ORANGE MANDARIN CAKE 
Cake:

1 box yellow cake mix
1/2 c. oil
4 eggs
1 large can mandarin oranges with juice

Icing:

1 medium tub Cool Whip
1/4 c. sugar
10 oz. can crushed pineapple, drained
1 small vanilla instant pudding mix

In a large mixing bowl, blend cake mix and oil. Add eggs one at a time mixing well after each addition. Add in oranges last so that they do not whip up smooth and pieces of orange are still visible in the batter. Pour into a 9 x 13 greased pan and bake at 350°F for 30 minutes or until toothpick inserted in the middle comes out clean.

While cake is baking, mix frosting in a mixing bowl by folding sugar and pudding mix into the Cool Whip and then adding the pineapple. Let cake cool completely and then frost.
