HOMEMADE SALSA | |
6 qt. tomatoes 1/2 qt. onions 1 qt. celery 1 1/2 pt. green pepper 1/2 red pepper 1/2 c. sugar 1/2 c. vinegar 1/4 c. salt 2 tbsp. celery salt 1/4 tsp. red pepper 1/2 tbsp. garlic powder 4 jalapeno peppers 2 (12 oz.) cans tomato paste 1 tbsp. crushed red pepper In large pan bring some water to a boil. Turn down heat and put tomatoes in for 1 minute. Take tomatoes out and peel the skin off. This will come off very easy. Once all the tomatoes are skinless, put in big pot and simmer tomatoes until they are like sauce, about 45 minutes. Add all ingredients and simmer for another 30 minutes. Fill sterilized jars to the top with the salsa. Use wire whip when simmering tomatoes to get them smooth. |
