DEBE'S ARTICHOKE FRITATTAS 
1/2 cube butter
1 med. onion, finely chopped
2 heaping tbsp. parsley
1/2 tsp. oregano
5 eggs
1/2 c. bread crumbs
1 tbsp. green taco sauce
2 c. Cheddar cheese, grated
Salt and pepper
2 jars marinated artichokes, drained (or 2 med. zucchini, grated)

Melt butter. Saute onions in it. In a bowl, beat eggs lightly, add bread crumbs, taco sauce, cheese, salt and pepper. Stir well. Add onion mixture and artichokes or zucchini. Pour into buttered 7 x 11 inch baking pan. Bake for 20-30 minutes at 350 degrees or until knife comes clean when inserted.
