VERLA'S BREAKFAST CASSEROLE 
1 lb. pork sausage
1/4 c. onion-chopped
1/4 c. green pepper
1/4 c. celery
1/4 c. green chiles
1 tsp. dry mustard
2 c. milk
6-8 eggs beaten
6 slices bread, cubed
1 c. cheddar cheese, grated
1 tsp. salt

Fry sausage and crumble. Drain, reserving 3 tablespoons fat. Saute onion, green peppers, celery, and green chiles in reserved fat. Mix all ingredients and place in 9 x 13 greased baking dish. Bake at 350 degrees for 1 hour.
