EASY DATE FILLED COOKIES 
1 c. butter
2 c. packed brown sugar
2 eggs
3 1/2 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder
1/8 tsp. cinnamon
1/2 c. milk
1 tsp. vanilla

Cream together butter and brown sugar. Add eggs and blend thoroughly. Stir in dry ingredients. Mix well. Drop by teaspoon onto baking sheet. With a spoon, form a "well" in each mound of dough. Place about one teaspoon of cooled date filling in each "well". Drop another small portion of dough over the filling in each mound. Bake in a moderate oven (350 degrees) for 12 to 15 minutes.

DATE FILLING:

3 c. chopped dates
1/2 c. water
1/2 c. sugar
1/4 tsp. salt
2 tbsp. lemon juice

Combine chopped dates, water, sugar and salt. Bring to boiling; reduce heat, cover and simmer 5 minutes, stirring often. Add lemon juice; cool.
