LEMON LOAF 
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 1/4 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1/2 c. walnuts, chopped
1/2 tsp. grated lemon rind
1/4 c. sugar
3 tbsp. lemon juice

Cream shortening with sugar; mix in eggs. Sift flour with baking powder and salt. Add the flour mixture and the milk alternately to the shortening mixture, stirring constantly. Mix in the nuts and lemon peel.

Bake in a greased 5x9 loaf pan in a moderate oven (350 degrees) for 1 hour. Combine the 1/4 cup sugar with the lemon juice and pour slowly over the top of the loaf until it is soaked in, as soon as loaf comes from the oven.
