CURRIED CHICKEN AND PEPPERS 
1 onion, sliced
2 green peppers, seed and sliced
1 clove garlic, minced
2 tbsp. olive oil
1 broiler chicken, cut up
4 c. chopped tomatoes
2 tsp. curry powder
1/2 tsp. dried thyme
1/2 tsp. pepper
1/4 c. chopped fresh parsley
1 c. water

Using a heavy roasting pan, saute the onion, peppers and garlic in hot oil. Add chicken parts, tomatoes, parsley, curry, thyme and pepper. Add water. Cover pan tightly, and bake in a 350 degree oven for 1 hour.

Makes 4 servings.
