CURRIED CHICKEN SALAD 
2 1/2 c. cooked white chicken, cut into chunks
2 tbsp. apple, peeled and diced
2 tbsp. lemon juice
1 1/2 c. celery, chopped
1 1/2 c. water chestnuts, sliced
3 tbsp. parsley, finely chopped
1 tbsp. chutney, chopped
1/2 c. mayonnaise
1 tsp. grated onion
2 tbsp. curry powder
2 c. red grapes, halved and seeded
3 tbsp. green onions, both green and white parts, chopped
1/2 c. yogurt or sour cream
Fruits for garnish

Sprinkle apple with lemon juice and combine with chicken chunks. Add grapes, celery, water chestnuts, green onion, parsley, and chutney. Mix together mayonnaise, yogurt, or sour cream,, grated onion, curry powder, salt, and pepper. Add dressing to chicken mixture. Toss lightly and chill. When ready to serve, spoon chicken mixture onto a bed of lettuce leaves and garnish with grapes, strawberries, melon and oranges or other fruits in season. Serves 4.
