HOMINY CASSEROLE 
1 lb. ground beef
5 oz. enchilada sauce
1 (14 1/2 oz.) can white hominy
5 oz. water
2 c. Cheddar cheese, grated
Plain corn chips
Salt and pepper to taste

Brown meat in large frying pan and add salt and pepper to taste. Drain off fat. Drain hominy; add to hamburger and stir. Add enchilada sauce and water. Heat for a few minutes. In a 1 1/2 quart greased casserole, spread half the meat and hominy mixture. Sprinkle 1 cup grated cheese on top.

Layer chips to cover cheese. Top with other half of meat mixture and remainder of the cheese. Garnish sides of the dish with chips. Bake at 325 degrees for 30 minutes or until mixture bubbles.
