DATE - APPLE COOKIES 
1 c. dates
1/2 c. water
1 cut shredded raw apple (with skins)
1/3 c. oil
1/2 c. chopped walnuts
1/2 tsp. salt
1 tsp. vanilla
3 c. rolled oats

Combine dates and water in saucepan. Heat, mash, and stir until smooth. Add shredded apple and oil and beat until smooth and oil is emulsified. Add other ingredients. Mix well. Let stand 10 minutes to absorb moisture. Beat briskly. Drop from teaspoon on ungreased cookie sheet. Bake at 375 degrees for 20 minutes or until browned. Yield: 36 cookies.
