BANANA MUFFINS 
1 c. all-purpose flour
1/4 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 c. mashed very ripe banana
1/2 c. quick cooking oats, uncooked
1/2 c. milk
1/4 c. butter, melted
1 egg, beaten

Combine first 7 ingredients, blending thoroughly; make a well in center of mixture. Combine remaining ingredients, stirring well; add to dry ingredients, stirring just until moistened. Fill greased and floured muffin pans 2/3 full. Bake at 425 degrees for 15 minutes or until done.

Note: If the bananas being used are not very ripe, you may need to add 2-4 tablespoons of sugar (or to your taste).

Yield 1 dozen.

Hi Cat,

Make sure the bananas are very ripe - if they aren't, then your batter won't be sweet enough and you'll need to add some extra sugar (taste and adjust before adding the egg).
