EGGSTRAORDINARY BRUNCH PIE 
4 c. frozen O'Brien potatoes, thawed
1/2 c. (2 oz.) shredded cheddar cheese
1/2 tsp. salt
1/4 tsp. pepper
1 egg, beaten
1 (10 oz.) pkg. frozen peas and onions
1 c. chopped ham
4 hard cooked eggs, chopped
1/4 c. reduced-calorie mayonnaise
2 tsp. prepared mustard

In medium bowl, toss together potatoes, cheese, salt and pepper. Stir in beaten egg until well combined. To form crust, press over bottom and up sides of greased 9-inch pie plate. Bake in preheated 425 degree oven until golden brown, about 25-30 minutes.

Meanwhile, cook peas and onions according to package directions; drain. Stir in remaining ingredients. Cook over low heat until heated through. Spoon warm egg mixture into potato shell. Cut into wedges to serve. Makes 4-6 servings.
