THE WORLD'S BEST RAISIN CAKE 
1 c. sugar
4 tbsp. butter
1 tsp. ground cinnamon
1/4 tsp. vanilla
2 c. coarsely grated apples
1 c. golden raisins
1 c. flour
1 tsp. baking soda
1 c. sifted powdered sugar
1 tbsp. grated lemon rind
Fresh lemon juice
1 tsp. nutmeg

Cream sugar with butter, cinnamon, nutmeg, and vanilla. Stir in apples, raisins, flour and baking soda just until moistened. Spread in lightly buttered 8-inch square pan. Bake at 350 degrees for 40-45 minutes.

While still warm, glaze with lemon icing made by mixing powdered sugar with grated lemon rind and enough lemon juice to make a glaze.
