SAN DIEGO BEACH-BAKED POTATOES 
4 med.-lg. (8 oz.) baking potatoes
1 (7 oz.) can undrained corn kernels
1 (4 oz.) can mild, peeled and chopped undrained green chiles
1/4 c. chopped pimentos
1 c. coarsely grated cheddar or low fat cheddar cheese
McCormick California-style garlic powder to taste

Prick potatoes. Bake at 400 degrees for 1 hour (or in microwave on HIGH for 20 minutes). Cut thin slice off top of potatoes. Scoop out potatoes and mash with fork. Stir in remaining ingredients including cheddar cheese. Refill potatoes and sprinkle with additional cheese if desired.

Reheat in 400 degree oven for 10 minutes (or in microwave on medium approximately 3 minutes) or until heated through. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
