GINGERBREAD 
2 c. cake flour
2 tsp. baking powder
1/4 tsp. baking soda
2 tsp. ginger
1/2 tsp. salt
1 tsp. cinnamon
1/3 c. butter or other shortening
1/2 c. sugar
1 egg, well beaten
2/3 c. molasses
3/4 c. sour milk or buttermilk

Sift flour once, add baking powder, soda, spices and salt and sift together three times. Cream butter thoroughly, add sugar gradually and cream together until light and fluffy. Add egg and molasses; then flour, alternately with milk, a small amount at a time. Beat after each addition until smooth. Bake in greased pan, 8x8x2 inches, in moderate oven 350 degrees F., 50 minutes or until done.
