GINGERBREAD PERSONS 
4 c. flour
1 tbsp. ginger
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. butter
1 c. light brown sugar
1/2 c. molasses

Sift dry ingredients together. Beat butter and sugar until cream and fluffy. Blend in molasses. Gradually add flour mixture. Chill until firm 1-2 hours or overnight.

Divide dough into quarters, roll dough 1/8 inch thick. Cut with cookie cutters and remove dough between cut outs. (Easy to work with.) Bake at 375 degrees for 7-8 minutes until lightly brown. Cool and decorate.
