SANTE FE CASSEROLE 
1 tbsp. vegetable oil
1 lb. lean ground beef
1/2 lb. ground veal, optional
1 med. onion, chopped
1 (4 oz.) can chopped green chilies
1 c. mushrooms, sliced
1 c. prepared salsa
1/2 c. sliced pimento stuffed olives
2 c. hot water
1 tbsp. beef flavored instant bouillon
2 c. uncooked noodles
2 c. sharp Cheddar cheese, shredded

In large skillet, heat oil over medium-high heat. Add meat and onion. Brown meat. Drain. Add chilies and mushrooms, cook 3 minutes. Stir in salsa and olives. Cook 2-3 minutes.

In medium saucepan, bring water to boil, stir in bouillon. Add noodles and cook 5 minutes until tender; drain well. Preheat oven to 350 degrees. Stir noodles into meat mixture. Spoon into 2 quart casserole. Top with shredded cheese. Bake 45 minutes. Serves 6-8.
