4 bunches of parsley 5 lg. tomatoes 1 bunch green onions (chives) 1 bunch green mint 1/2 to 1 c. fresh lemon juice 1/2 c. olive oil 1/4 c. cracked wheat (very fine grain Bulgur) Salt and pepper Chop parsley, green onions, green mint leaves, and tomatoes very finely. Soak cracked wheat in 1/2 cup lemon, add all of the above chopped green ingredients and the tomatoes. Add the olive oil, salt and pepper and mix thoroughly. Salad should look very green, in proportion to the tomatoes. In addition, salad should be moist from the olive oil and lemons. You may add or reduce amounts of olive oil, lemons, salt and pepper to taste. Serves 8 to 10 people. |
