EASY SHRIMP SALAD 
1 lb. shrimp, peeled
1/2 c. celery, chopped
2 hard boiled eggs; optional
1 c. shell macaroni, cooked
1/2 c. mayonnaise
1 tsp. lemon juice
1 bay leaf
2 tsp. salt

Drop shrimp into 3 cups boiling water seasoned with bay leaf and salt.

Cook stirring twice for 2-3 minutes or until a large shrimp is opaque when cut in half. Drain at once and rinse thoroughly with cold water. Chill.

Combine mayonnaise, lemon juice; set aside. Combine all ingredients and chill. Serve on lettuce leaf with tomato wedges. 4 servings.
