HEALTHFUL VEGETABLE MEAT LOAF | |
1 lb. lean ground beef 2 eggs, slightly beaten 1 lg. or 2 sm. carrots, peeled 1 lg. or 2 sm. stalks celery 1 lg. or 2 sm. potatoes 1 packaged section Wheatsworth crackers 1 sm. jar spaghetti sauce 1 sm. onion Crumble crackers in food processor. Shred carrots, celery, onion and potatoes in food processor. Mix crackers and shredded vegetables to meat and eggs. Add enough spaghetti sauce to moisten. Place mixture in flat pan and flatten loaf. Pour remaining sauce over loaf. Bake at 375 degrees for approximately 1 hour. |
