SHORTCAKE BISCUITS 
3 c. flour
2 1/2 tbsp. sugar
4 1/2 tsp. baking powder
3/4 tsp. cream of tartar
3/4 tsp. salt
1 1/2 sticks butter
3/4 c. milk
1 egg, beaten
Use fresh or frozen fruit

Sift together first 5 ingredients. Cut in chilled butter. Stir in milk and eggs. Mix to form a dough. Knead dough once or twice on floured board. Cut in biscuits; place on cookie sheet. Cook at 400 degrees for 15 minutes. Split and cover with fruit. Top with whipped cream.
