ITALIAN COOKIES 
1 c. butter
2 c. sugar
1 can ricotta cheese (15 oz.)
3 eggs
1 tsp. vanilla
4 c. flour
2 tsp. salt
1 tsp. baking soda

Cream all except flour, baking soda and cheese. Add flour and baking soda. Blend in cheese. Drop 1/2 teaspoon onto greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes. Frost with colored icing (Jiffy icing).
