GERMAN PANCAKE 
2 tbsp. butter
4 eggs
2/3 c. flour
1 tbsp. sugar
1/2 tsp. salt
2/3 c. milk

Heat oven to 400 degrees. Put butter into a 10 inch heavy, ovenproof skillet (or 2 smaller skillets); place in oven until butter melts and skillet is very hot.

Combine other ingredients and beat 2 minutes or until smooth. Pour immediately into hot skillet. Bake 20 to 25 minutes until batter has climbed up the sides of the skillet and eggs are browned and puffy.

TOPPINGS: Whipped butter, powdered sugar and lemon juice combined; or crumbled bacon, sauteed apples or fresh fruit (strawberries are especially good).
