Preheat oven to 400 degrees. Beat 5 egg whites until stiff. Add 1/4 teaspoon salt, 1/2 teaspoon cream of tartar. Add gradually 1 1/2 cup sugar. Grease and flour 9 or 10-inch pie plate. Don't make too much of a dent. Cook the meringue and turn off immediately. Lave in oven 5 hours or overnight. FILLING: 5 egg yolks Beat with 1/2 cup sugar. Blend in 4 tablespoons lemon juice and rind. Stir over boiling water 5-7, overnight if possible. Cool and whip 1 cup of whipping cream. Fold half of cream in with lemon mixture. Put other half on top of pie. Refrigerate overnight. |
