TURKEY PARMESAN 
1 egg, beaten
Salt
Pepper
1/4 c. grated Parmesan
1/3 c. bread crumbs
2 turkey breast cutlets
3 tbsp. oil
1 1/2 c. spaghetti sauce (jarred or your own)
4 oz. Mozzarella cheese, shredded

Combine salt, pepper, Parmesan, and bread crumbs. Dip turkey cutlets into egg, then coat well with bread crumb mixture. Brown on both sides in hot oil. Place in baking dish. Spoon sauce over cutlets and top with Mozzarella. Bake at 350 degrees for 20 minutes or until tender. Serve with extra sauce and pasta on the side.
