ICED COFFEE 
This is a great recipe for a hot summer day. Try using flavored coffee beans, or for a refreshing after dinner cocktail try adding a splash of coffee liqueur.

1/2 cup fine ground coffee beans
2 cups skim milk
ice

SIMPLE SYRUP:

1/2 cup water
1/4 cup brown sugar
1/4 cup white sugar
1 cap full vanilla extract

You will first need to cold brew your coffee. In a 32 oz mason jar add 1/2 cup coffee grounds and fill with water leaving about 1 in of space from the top cover and let sit on the counter for 12 hours. After 12 hours prepare a wire mesh strainer with a coffee filter in it. Slowly dump the coffee mixture into the strainer.

While your coffee is straining create a simple syrup by combing 1/2 cup water, 1/4 cup brown sugar, 1/4 cup white sugar and 1 cap full vanilla. Bring to a boil and let boil 1 to 2 minutes. You may also use flavored coffee syrups that are available in the coffee isle at most retail stores.

Take a large pitcher and combine 2 cups of your cold brewed coffee with 2 cups skim milk. Stir in your simple syrup and chill. Serve over ice and enjoy!
