CREAM OF BROCCOLI (FOR LARGE
CROWD) -
 
1 lg. onion
2 sticks butter
1 gallon milk
2 qt. half and half
1/2 c. chicken base
1 tsp. Worcestershire
1/2 tsp. pepper

ROUX:

2 sticks butter
Flour

Saute onions in 2 sticks butter, until tender. Add milk and half and half. Stir gently, add base and seasonings. Melt rest of butter, add enough flour to make a paste. Stir into milk, meanwhile, cook until tender 4 to 6 heads of broccoli then add to milk mixture.

Cook slowly until thickens. Can use mushrooms, cauliflower or potatoes.
